Lighter chocolate chip banana bread

This chocolate chip banana bread recipe was given to me by a relative who is the health nut of the family. She takes, say an Ina Garten recipe that calls for a pound of butter, and replaces half the amount with applesauce.  She is a great baker and looks pretty good too, which is why I always give her recipes a try. Here is her doctored recipe for chocolate chip banana bread. It is pretty delicious even with half the butter. I put a slice in my kids’ lunch boxes today… I expect hugs after school!

Ingredients
  • ⅔ cup all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ⅔ cup whole spelt flour
  • ¼ cup butter at room temperature
  • ½ cup applesauce
  • ⅔ cup sugar
  • 2 large ripe bananas, mashed
  • 2 eggs, lightly beaten
  • 3 Tbsp just boiling water
  • 1 cup chopped pecans (optional)
  • 1 cup semi-sweet chocolate chips
Instructions
  1. Preheat the oven to 325F.
  2. Grease and flour a 9 x 5 inch loaf pan.
  3. Sift the flours, baking soda, salt and cinnamon into a medium bowl. Set aside.
  4. In a large bowl with an electric mixer, beat the butter until light and creamy (1-2 minutes).
  5. Gradually beat in the sugar until light and fluffy. Mix in the applesauce.
  6. On low speed, beat in the mashed bananas and then the eggs (do not worry if the mixture looks curdled).
  7. Stir in the flour mixture alternately in batches with the hot water until just combined.
  8. Stir in the pecans and chocolate chips.
  9. Scrape the batter into the prepared pan, smoothing the top evenly.
  10. Bake until well risen and dark golden brown, about 1 hour and 5 minutes. Because this is a very moist bread, a cake tester may not come out clean.
  11. Remove pan to a wire rack to cool about ½ hour, then unfold on to the rack top-side up.

    Hello gorgeous banana bread!! This is right up my alley. I love bananas and chocolate chips together and love that this is a healthy version of it. I always feel so guilty putting too much fat in a recipe and the truth is you can still get a very moist cake without it – so I can’t wait to try this!! Thanks!!!
