Coconut macaroons are a delicious treat for coconut lovers such as myself and this recipe is simply perfect. The orange scented macaroons are topped with dark chocolate for a lovely visual contrast and intense flavor. I like to make these cookies around the holidays since these are divine with tea or coffee and are a breeze to make. I only used one bowl to prepare these, and they were ready in no time. Plus, as an added bonus, your house smells heavenly while these are baking. Enjoy!

Coconut macaroons with orange zest
  • 1 stick unsalted butter, at room temperature
  • ¾ cup sugar
  • ⅛ teaspoon salt
  • 2 teaspoons orange zest
  • 3 large eggs
  • 4 cups sweetened shredded coconut
  • 2 cups unsweetened shredded (or flaked) coconut
  • 6 ounces bittersweet chocolate, melted
  1. Preheat oven to 325 F and line 3 cookie sheets with parchment paper.
  2. In a large bowl, beat the sugar, salt, and butter together with a large whisk. Add the orange zest.
  3. Incorporate the eggs, one at a time until well blended.
  4. Add the 6 cups of coconut and mix well.
  5. Using a small ice cream scoop, shape macaroons and place on the prepared cookie sheet, about 1½ inches apart.
  6. Bake for 25-30 minutes, or until the tops are browned. Allow to cool on the baking sheets.
  7. Once cooled, melt the chocolate in a microwave safe container.
  8. Drizzle on the macaroons using a fork.
