Roasted cauliflower salad with pine nuts and raisins

untitled-1-2

Roasted cauliflower is delicious straight out of the oven, seasoned with salt and pepper and a bit of olive oil, in my opinion. In fact it is one of my favorite veggies to roast, because it is so easy and delicious, but also full of healthy vitamins and minerals (Vitamin C and K among others). When you pair it with toasted pine nuts and raisins to add a bit of contrasting sweetness, as well as a delicious Dijon vinaigrette, the outcome is a very delicious thing!  This salad is a perfect way to start a meal or as a side.
