Salmon salad by Bake Bellissima

We had a few no-shows at a bbq and I was left with many leftover salmon fillets. Rather than serve them in the same way again, which would send my family fleeing to the nearest pizza joint, I gave them a new life as salmon salad with a delicious tartar sauce. After all, why should tuna have all the fun? Salmon can be delicious in a sandwich with this amazing dressing. Best of all, I am proud to say there are officially no more salmon leftovers!

Salmon salad with tartar sauce

Serves: 4-6
Ingredients
  • 6 salmon fillets (grilled or roasted for 15 minutes with salt pepper and olive oil)
  • 1 cup light mayonnaise (store bought or homemade)
  • 2 Tbsp shallot
  • 2 Tbsp chopped capers
  • 2 Tbsp chopped dill pickles
  • 1 Tbsp Dijon mustard
  • 2 tsp lemon juice
  • Dash of hot sauce (Red Hot or Tabasco, optional)
  • salt and pepper
Instructions
  1. Shred the salmon fillets with a fork.
  2. Mix the tartar sauce ingredients together and incorporate into the shredded salmon.
  3. Serve with good bread.
